Build-A-Shop

Today I set up shop at Etsy.com
I am not officially open but designing and creating bits and pieces. Having some picture problems but need to work on those when it is lighter.
Am truly having fun and will be adding funnier designs but for now loving it.
Will let you all know when complete. For now you can take a peek and any suggestions are welcomed.

Hit the nail on the head

Your Daily Horoscope: January 3, 2010

Virgo  Aug. 23 - Sept 22
The accent for today is on anticipation, as if you spend a good part of the day waiting for something to happen, Virgo. It's also possible that due to the Mercury Retrograde being at work, you feel like you are being frustrated at every turn. If you are expecting things to fall in your lap without your having to do anything, you are setting yourself up for a disappointment. You need to be patient and not focus on what you want to happen, but be alert so you can recognize it when it does.

Happy 2010

I've learned to shut up--to know when something is worth a debate and when it's not. Lack of confidence is what makes you want to change someone else's mind. When you are OK, you don't need to convince anyone in order to empower yourself.

Paula Dean's Pumpkin Crunch

Aunt Trina’s Holiday Pumpkin Crunch
An old Alabama favorite given to Paula from her Aunt Trina.

Ingredients:

1 (15 oz.) can fresh pumpkin
1 (12 oz.) can evaporated milk
1 teaspoon cinnamon
1 c. sugar
3 eggs, beaten
1 box yellow cake mix
1 cup chopped pecans
2 sticks butter, cut into pieces
FROSTING:
1 (8 oz.) pkg. softened cream cheese
1 cup Heavy Whipping Cream
1/2 cup powdered sugar
1/2 teaspoon cinnamon

Directions

In a large mixing bowl, whisk together pumpkin, evaporated milk, cinnamon and sugar until well combined.  Add eggs and mix well.
Pour mixture into a 9X13 baking dish prepared with a non stick spray. Sprinkle cake mix evenly over entire top. Sprinkle nuts evenly over cake mix and top with butter pieces.  Bake at 350º F for 50-60 minutes.  Set aside to cool.
Prepare frosting while cake is cooling.  In a large mixing bowl using a hand mixer, whip cream cheese until light.  Add in whipping cream and continue to whip until fully combined and thickening.  Add powdered sugar and cinnamon and whip until smooth.
To Serve:  Scoop out a slice of the pumpkin crunch and top with a dollop of the cream cheese frosting, or frost the entire pumpkin crunch with the frosting.

My New Year

I have spend lots of time thinking about what I would like to do and simply not doing it.

I have decided to start my own Etsy Shop, The Lemon Tree. I think what has held me back was the possibility of failure. I finally figured out that I need to at least try and if all doesn't go well, grow from it.
I  will add more info as my shop starts to grow.
